A Culinary Story
A restaurant has existed on the first floor of 13 Rue du Paquier since 1929!
People used to come here to Chez Plèche. Madame cooked in her own home for her husband’s friends, officers stationed at the nearby barracks on Quai Eustache Chapuis. Guests could even pass through the courtyard and access the back of the building on Rue du Lac.
The restaurant remained in the Plèche family until it was taken over in 1988 by Jean-Claude Battistela. It was at this time that the establishment was renamed L’Etage, and our signature dish—the beef steak with Café de Paris sauce—was added to the menu, a recipe that remains secret to this day.
Since 2013, the venue has been run by the couple Carine and Cédric Chaix, along with their partner Carole Edouard. Their wish was to change nothing—except to each add their own personal touch: Cédric’s passion for wine, and Carine and Carole’s energy in bringing the ground-floor bar to life.
L’Etage is a human-sized restaurant, a vibrant place where a team of 25 people works together, seven days a week, taking the time to do things properly. Here, we welcome you, advise you, cook for you, and take care of you.
You’ll find our classics such as the Café de Paris beef, beef tartare, veal kidneys, sweetbreads, and the authentic Milanese escalope.
We also offer traditional regional cuisine, including cheese fondues (Comté, Beaufort, Etivaz), raclette made with raw milk, and a particularly generous puff pastry with Reblochon cheese.
Our gourmet offerings also evolve with the inspiration of our head chef, Emmanuel Maillefer, and our pastry chef, Luc Bigeard, following the seasons and the availability of high-quality products.
Because a great dish always starts with great ingredients, we pay special attention to selecting our suppliers—trusted partners and local producers whenever possible. This “everything homemade” philosophy gives each dish its authenticity and unique flavor.
